There’s something remarkable happening on this little island at the bottom of the world.

Tasmanian whisky has gone from improbable idea to global phenomenon — collecting world
titles, rewriting the rules and earning its place alongside the great whisky regions of the world.

Perhaps it’s the water. The barley. The cold Southern air. The barrels. The people. We think it’s 
worth putting your nose into.

This September, Nose(y) Club leaves the perfume bottle for the whisky glass as we nose and 
taste three extraordinary expressions of Tasmanian whisky.


The world-beater.

Four World’s Best titles. The only Australian whisky ever named World’s Best Single Malt. And in 2026, World’s Best Single Cask Single Malt — for the third time.

At its heart is Heather Tillott, one of the great figures in contemporary whisky: Global Distillery Manager of the Year in 2024 and Innovation Manager of the Year in 2026.

From a small Hobart distillery, Sullivans Cove has repeatedly taken on the whisky world — and won.

LARK

The pioneer.

It began with Bill and Lyn Lark asking a deceptively simple question: why couldn’t Tasmania make great whisky?

In 1992, they helped revive a distilling tradition that had effectively been outlawed on the island for more than 150 years. What followed helped create an entire Tasmanian whisky industry.

Bill became the first distiller in the Southern Hemisphere inducted into the Whisky Magazine Hall of Fame. More than three decades later, Lark continues to collect international awards — with Master Distiller Chris Thomson named Global Master Distiller/Blender of the Year in 2026.

One man had an idea. An island followed.

WAUBS HARBOUR

The new cult kid on the coast.

On Tasmania’s wild east coast, whisky matures metres from the sea. Waubs Harbour is younger, smaller and already making plenty of noise — creating richly textured single malts with a distinctive maritime character of salt, mineral and ocean air.

“Waubs Original” has already been crowned an Australian category winner at the World Whiskies Awards.

The new guard has arrived.
