My favourite dining experience in Australia is the Berowa Waters Inn on the Hawkesbury. It captures everything I love about living here: a wilderness location perched on a pristine waterfront (accessed by seaplane or boat), exceptional architecture (thank you Glenn Murcutt), food and wine that celebrate our best ingredients (including our native botanicals) - and it’s all served with humility and charm. For me, this is perfection.

 It takes a very cohesive team to run an operation like this in such a remote location and so it’s wonderful to see them recently awarded 2 hats in the NSW Good Food Guide. Congrats to Brian and Victoria and the whole team.
